Spanish Chicken

Our Friday meal turned out being a good one.  J especially liked the fresh mozzarella cheese on top (after cooking the chicken and veggies on the stove, I added shredded cheese and placed under the broiler to melt).  I enjoyed the tangy flavor of the sun-dried tomatoes.  Here's how it turned out:


Tonight's menu is slow cooker turkey chili and garlic knots.  We plan to eat our warm chili while watching some of the action at the cold winter olympics.  Go USA!
